The FEMA Expert Panel has published 3,039 current GRAS flavoring substances. Ambrose publishes a reference page for each one, and 1,333 are listed here so far. Each page gives the FEMA number, CAS number, GRAS status with its citation, natural or artificial status by market, the structure, odor and taste, and common uses.

The ingredient lookup searches the whole corpus, and the FEMA number index lists the same substances by number instead of by name.
